For the marinade

Directions

Begin by combining the marinade ingredients in a bowl. Add the steak strips and toss them to ensure they are coated evenly. For optimal flavour, refrigerate the steak in the marinade for up to 24 hours if possible. Alternatively, you can proceed to step 2 if you’re ready to continue with the recipe.

Sprinkle the cornflour over the steak, ensuring each piece is coated with a floury paste. Separate the strips and arrange them on a plate. Drizzle a small amount of oil over each piece of steak. Preheat the air fryer for 10 minutes, heat it to 220°C in preparation.

Place the beef carefully on the cooking rack inside the air fryer. Cook it for 6 minutes, then flip the beef over and continue cooking for another 4-6 minutes until it turns crispy and golden.

While the beef is cooking, heat 2 tablespoons of vegetable oil in a wok over high heat. Stir-fry the garlic, ginger, chili, pepper and the white parts of the spring onions for 2-3 minutes until the pepper softens. Take care not to burn the ginger and garlic. Add the vinegar, soy sauce, sweet chili sauce and tomato ketchup to the wok. Mix well and let it cook for another minute until it starts to bubble.

Transfer the cooked beef from the air fryer to the wok and toss it together with the sauce. Cook for an additional minute until the beef is heated through and coated in the flavourful sauce. To serve, sprinkle the dish with the green parts of the spring onions and offer a small amount of extra sauce on the side for dipping or drizzling.
